Couscous salad with Dates
Very easy to make, healthy, and stores well in the fridge.
Ingredients
- Couscous: Check the instructions
- Cucumber: Diced
- Feta or White Cheese: Diced
- Dates: Cut a similar size to the cucumber and feta
- Tomato: Optional
- Carrots: Optional
- Spring Onions: Optional
- Salt and Pepper: As much as you want
- Mayonaise: (Optional) Homemade if you can :)
Steps

Couscous: Put in a bowl. Poor over boiling water, cover with a plate and wait 5 minutes.

Salad: Dice everything into a similar size and place into the same bowl. I like to put salt and pepper, drizzle some olive oil, and mix it before adding the dates. Throw a spoon of mayo in it and mix it around some more.

Presentation: Put the couscous in individual bowls and let people dish up the rest of the salad themselves, or just mix it all together and then dish it up.

Storage: Put the leftovers in the container in the fridge and eat the next day.
