Penne with a kind of Ragu. Which I am to understand is a meaty, tomatoey italian sauce for with pasta and stuff. In this case soya mince was used which once in the sauce it probably doesn’t really taste that different.

Ingredients

  • mushrooms
  • courgette
  • tomato
  • yellow pepper
  • soya mince
  • tin of tomato puree
  • tomato passata
  • penne
  • parmesan (grana padano)
  • (Optional) Onion
  • (Optional) Garlic

Steps

  1. Peel the garlic cloves and place in a small bowl for later.
  2. Peel the onions make sure to remove the harder outer peels. Chop finely and place with the garlic cloves.
  3. Fry the garlic and onion and then add the mushrooms with some salt
  4. Add the chopped courgette, mushroom and yellow pepper
  5. Put the pasta on to boil
  6. Add the soya mince and let it fry for a minute
  7. Add the tomato passata and tomato puree and let the sauce simmer
  8. Serve the pasta with a topping of sauce, springle the parmesan on top
