Roast vegetables
Hearty roast vegetables. Especially nice n the autumn and winter.
Ingredients
- butternut
- sweet potato
- potatoes (roasting)
- carrot
- courgette
- aubergine
- mushrooms
- asparagus
- feta
- garlic
- onion
Steps
- Peel the garlic cloves and place in a small bowl for later.
- Peel the onions make sure to remove the harder outer peels. Chop roughly and place with the garlic cloves.
- Peel the sweet potato, carrots and potatos
- Chop all the sweet potato, carrots and potatos into similar sized pieces
- Place the garlic cloves, onions, sweet potato, carrots and potatos
