This is a take on a classic Italian dish which. This version, according to Italian Grandmothers, no longer resembles the original, hence the name has been changed to preserve the identity of the true Spaghetti Bolognese.

Ingredients

  1. Spaghetti: Around 80g per large person 40g per small person
  2. Onion: 1 onion , chopped
  3. Garlic: 2 cloves, chopped
  4. Aubergine: Cut into 1cm cubes
  5. Courgette: Cut into 1cm cubes
  6. Carrot: Sliced thinly
  7. Tomato Passata: 500ml
  8. Fresh Tomato: 1 or 2, chopped
  9. Tomato Paste: 10g
  10. Soya Mince: 500g

Steps

Boil some water in a large pot. Add a little salt. Drop the spaghetti in. Cook for approx 10 mins or how ever long it says ont he packet. Once finished, rinse and drain. Place back in the pot for later.

In a large frying pan, heat some olive oil. Throw the onion and then the garlic in. Next comes the Aubergines, carrots and Courgette. Once they’ve been in for about 5 minutes, throw in the Soya Mince, and then the Tomato Passata and Tomata Paste. Put a lid on it and let it simmer for 5 minutes. Put in the chopped tomato and some Italian herbs.

Pour the contents of the frying pan in with the past and some olive oil, put on a low heat and stir in for 1 minute. Or dish the pasta into the bowl and pur the Soya mince sauce over the top. Put some parmesan cheese or grated cheese on top.
